Wootton Dairy

All our cheeses are organic, unpasteurised and made using vegetarian rennet.
Cheese and yoghurt are hand-made in small batches using traditional methods, in converted farm buildings. Compared with cows, sheep produce a relatively small quantity of milk but of very good quality for cheese-making, due to the high protein content. We also make cheese with lovely, rich Jersey cow milk, which we buy from a local organic farm
Our farm nestles in a lush valley with the Redlake river running through it and broad hedgerows border our meadows, supporting a large variety of wildlife. The land became certified organic in 2001, but has been farmed using traditional methods for almost 40 years. In return, we have been rewarded with an abundance of diverse flowers and grasses which help to give our unpasteurised ewes' milk cheeses their distinctive, subtle flavours.
