Tomato sauce

From Nourishing Traditions by Sally Fallon

Ingredients:

2 organic ripe tomatoes

1 organic red pepper - seeded and chopped

1 organic onion peeled and chopped

1/2 teaspoon natural unprocessed seal salt

1/2 cup chicken stock (see soups and stocks)

8 tablespoons extra virgin olive oil

Method: Blend tomatoes, pepper and onions in food processor. Place in pan with remaining ingredients. Bring to boil, cover and simmer for 3 minutes. Remove top and cook, stirring constantly, for another 5 minutes.
